INGREDIENTS

  • 175 g fine semolina
  • 225 g flour
  • 7 g instant yeast
  • 12 g granulated sugar
  • 7 g salt
  • 30 ml olive oil
  • 220 ml water
  • 40 g butter
  • 1 egg
  • 100 g grated cheese
  • 100 g yellow onion
  • 20 g fresh parsley
  • 2 g ras el hanout
  • 20 ml olive oil
  • 500 g chicken
  • 5 g ras el hanout
  • 2 g cayenne pepper
  • 3 g garlic powder
  • 3 g onion powder
  • 1 g dried chives
  • 3.5 g salt
  • 30 g mayonnaise
  • 30 g sweet chili sauce
  • 15 g sambal
  • 35 g red onion
  • 75 g green olives
  • 100 g cheddar cheese
  • 650 g fresh fries

INSTRUCTIONS

  1. 1 Combine the fine semolina with the flour, yeast, sugar, salt, olive oil, and water in a deep bowl. Mix well and knead for 10-12 minutes until smooth.
  2. 2 Cover the dough and let it rise for 1 hour in a warm place or until doubled in size.
  3. 3 In another bowl, add the grated cheese, yellow onion, parsley, and ras el hanout. Mix well and set aside.
  4. 4 Punch down the dough and divide into 9 equal pieces. Shape them into balls.
  5. 5 Take a dough ball and roll it out with a rolling pin to a 17x20 cm rectangle.
  6. 6 Melt the butter and brush the dough with it. Sprinkle some of the cheese mixture over it.
  7. 7 Fold the dough to form a packet.
  8. 8 Place the dough packets on a baking sheet lined with parchment paper. Brush with a beaten egg and sprinkle with some cheese mixture.
  9. 9 Let the dough packets rise for 30 minutes in a warm place or until doubled in size.
  10. 10 Bake the buns in a preheated oven at 200°C for 12-18 minutes or until golden brown. Monitor baking time as ovens vary. Cover immediately with a clean tea towel to keep them soft.
  11. 11 Heat the olive oil in a skillet over medium-high heat. Add the chicken, ras el hanout, cayenne pepper, garlic powder, onion powder, chives, and salt. Cook for 4-5 minutes. Add mayonnaise, sweet chili sauce, and sambal. Mix well. Add red onion and olives. Cook for 1 minute. Remove from heat and add slices of cheddar cheese or preferred cheese.
  12. 12 Fill the buns with sauce, chicken mixture, fresh fries, fresh vegetables, and sauce to taste. Enjoy!
